A2 vs A1 Ghee — What's the Difference and Why It Matters

PRAJNASHIS PRUSTY

Walk into any grocery store and you'll find dozens of ghee brands. But not all ghee comes from the same type of milk. The difference between A1 and A2 milk — and the ghee made from them — is significant, and understanding it could change what you buy forever.

What is A1 and A2 Milk?

All cow milk contains a protein called beta-casein. There are two main types:

  • A1 beta-casein — found in milk from crossbred and foreign cow breeds like Holstein, Jersey, and HF cows
  • A2 beta-casein — found in milk from indigenous Indian cow breeds like Gir, Sahiwal, Rathi, and Tharparkar

When A1 beta-casein is digested, it releases a peptide called BCM-7 linked to digestive discomfort. A2 beta-casein does not produce BCM-7, making A2 ghee far gentler on the gut.
